Commis Chef – Hotel La Neige, Hakuba

About the role

Hakuba Hospitality Group is seeking enthusiastic Commis Chefs to support the kitchen teams at its venues, including the new fine‑dining restaurant Séve at Hotel La Neige. You will work in a fast‑paced, high‑standard environment, preparing and cooking menu items while learning from experienced chefs.

Key responsibilities

• Prepare ingredients and cook dishes according to recipes, ensuring consistent taste, presentation and portion size.
• Set up and stock stations (mise en place) so that all supplies are ready before service.
• Maintain cleanliness and organisation of the kitchen, following sanitation protocols.
• Check quality of raw materials and finished dishes to meet venue standards and food‑safety requirements.
• Assist with inventory control by monitoring stock levels and helping store deliveries.
• Apply proper food‑safety and hygiene practices, including correct storage and labeling.
• Collaborate with other kitchen staff and section chefs to ensure smooth service.

Required profile

• Legal right to live and work in Japan.
• Excellent interpersonal and communication skills.
• Willingness to work flexible hours, including evenings, weekends and holidays.
• Ability to handle a fast‑paced environment, stand for long periods and lift heavy objects.
• Strong work ethic and a team‑first mentality.
• Japanese or international culinary licence preferred.
